Vegan Zuchinni Banana Bread

So, I made some of the above

Mallard has told me that he doesn’t fancy vegan food…

Exhibit A

…uh huh. 

I found the recipe here.  I omitted the sugar and used agave because I really don’t buy sugar anymore. 

Two years ago, I was baking every week at least once and I always had white flour and sugar.  ugh.  No more.

Once in a while is okay but I don’t really want refined white powders to be my pantry staple.

…well maybe if it’s this

I also made Veganomicon’s Collard recipe

with a side of black beans. 

Hooray I like collards!

Onto grocery shopping…

I buy Whole Wheat bread for Snuffy.  I buy Arnold’s brand because it is one of the few that doesn’t contain HFCS

People can say what they wish but in every study,

the rats that ate HFCS got fat or fatter and the rats that ate sugar maintained their weight or gained less.

So, we are as HFCS free as possible for that reason and because I am looking to help not hurt our farmers.

  The massive amounts or corn used to make junk drives the prices of corn down and thus hurts our farmers. 

Moving on.  Although Arnold’s brand doesn’t contain HFCS, it does contain soybean oil.

Great, now I am feeding GMO, chemical filled soybeans to my two-year old.

Plus, using GMO soybeans in everything is not helping our farmers either.

Don’t get me wrong, I like soy in moderation if it is supposed to be in something…like tofu or soy yogurt.

It’s not supposed to be in Whole Wheat bread.

So, I looked for a bread not containing soy bean oil…

I’m sure it’s not an essential ingredient and it’s wierd to put it in bread anyway.

Every loaf of bread in the aisle had either soybean oil of HFCS

A testament of what is wrong with our food system.

Does anyone have a recipe for vegan whole wheat bread?

It doesn’t necessarily have to be vegan

I don’t make Snuff eat vegan as she would demolish my Dyson if I took her Stonyfield Yo-Baby away ;)

    HAHA! That is funny how your “fancy vegan food” is just about gone! That reminds me of when I my hubby saw me eating a rice cake with peanut butter on it and asked what I was eating. When I told him what it was he said, “ugh, gross. Diet food.Nevermind”. Then I let him have a bite and he liked it and wanted me to fix him one…sigh… Men can be so fickle HAHA! :)

    yum, that looks so good! I’m a total weirdo and can’t stand bananas alone (I can’t get past the smell and don’t like the texture) but love banana bread.. and zucchini bread, so this looks perfect! And I always enjoy surprising people who are nay-sayers with healthy &/or vegan treats that they end up loving!

    i love zuke and nanna bread…combined! perfect! I am with alyson, i dont like nanas alone but in softserve, smoothies, bread, yep! yum!

    i think it’s great you have totallyy overhauled your baking habits! I do use sugar and many vegan/holistic community types do not use it at all. For me, I dont have a problem with it for my personal body but again, I am not using tons here! I am the queen of raw brock and kale chips LOL Flour…that was sworn off about 10 years ago! I dont even buy GF flour. Unless i can make it w/ oat or almond flour, I aint makin it!

    Thanks for stopping by my blog. It’s nice to know comparatively large cities can still suck a whole lot when it comes to food. Actually that’s terrible, but I guess it makes me feel better about my living situation right now in regard to food.

    I was really frustrated with bread in this area, too, so I started making my own. I didn’t settle on a particular recipe, otherwise I would recommend one. And obviously from my use of past tense I don’t really make bread anymore. Busy and somehow still lazy. Anyway, good luck finding a recipe.

    Awesome job changing up your cooking ways! I slowly made several switches too. I’m always a sucker for banana bread and zuchini bread..put them together…I’m there!

    I have to say, however, there have been zero studies on Agave nectar, and it’s made up of more fructose than HFCS, so I wonder how fat THOSE rats would get! Just a side note :) I just don’t have problems with HFCS, as long as I am not eating it all the time, which I’m not. But to each her own. I respect your decision not to consume it, and not give it to your family.
    As for the GMO issue, I am on the fence with it. I posted about GMOs about a month ago and I don’t know what to think, really. I just wish we knew when we were eating GMOs, but we never do! Frustrating.

    The bread sounds AWESOME! I just bought collards today to make wraps :-)

    I used to live on Arnolds breads, the low carb kind…loaded with GMO’s…yuck!

    I have to send you this whole post on Agave from my friend…it de-bunks all teh criticism out there! I am with you on the anti-HFCS train…I hate that garbage!!!!

    Yeah that’s just wrong that you can’t find whole wheat bread without soybean oil or HFCS in the grocery store!

    I was intimated picking up collard greens at the produce market because I did not know what to do with it. I tried a recipe that included collard greens, garlic, balsamic vinegar and pine nuts and now I’m hooked on collard greens. I think I can eat 1 whole bunch or two on my own. I’m sad though because my Wholefoods hasn’t carried it for awhile, not sure if it’s out of season.

    The cake looks good :)

    My WF still has them but I’m not sure what their abundant season is. The only collards I had eaten previously were traditional southern green and I hated the taste. But, I realized that it just has so much to do with how we cook them. Thanks for stopping by :)

    Wow! I haven’t been on your blog in a while! I love the new look!!!!

    I love the combo of zucchini and nanners. My husband might actually eat them. If he sees green in a baked good, he tends to run the other way screaming. :p
