Mallard had been out of town for so long!  He was sick of eating out and eating deli meat sandwiches.   He  requested homecooking when he got home!

So I picked up some organic cow  beef from Whole Foods

Happy Cow Meatloaf

1.5 pounds of 90/10 organic ground cow beef

2 cups soft whole wheat bread crumbs (Arnold’s)

2 Cage Free , Grain Fed Eggs (hormone and antibiotic free)

Sage to taste

About 1/2 cup of organic 1% milk

1 Small Yellow Onion diced and sauteed in olive oil

Mix it well.  I use my kitchen aid because I don’t like touching raw meat.  I cover a rack with foil and form my meat mixture into a loaf (gloves required for me).  I then put a pan underneath to catch the “juices”.  I bake it at 350 for about an hour and 20 minutes before adding my catsup mixure to the top.

 

Catsup Mixture

1/2 cup Organic Catsup and 2 TBS organic (or regular) brown suga!

I also mashed some potatoes.

1.2 pounds (wierd, same as the meat) golden potatoes peeled, diced , boiled until tender.

2 cloves of garlic minced and sauteed in Olive Oil

3 TBS melted Earth Balance Spread

Organic 1% Milk added while mixing until desired consistency is reached.

The next night, Mallard requested Mexican

Easy Peasy Enchiladas

1 pound Organic 90/10 beef

1/2 can Green Chillies ( I messed up and bought the “undiced” chillies and diced them myself)

1.5 bottles of your fave Enchilada Sauce ( I want to learn to make my own sauce…working on that)

1/2  of an Onion

6 Tortillas ( I prefer Ezekiel, Mallard likes the low carb preservative laden kind)

Shredded Monteray Jack and Cheddar – the amount is up to you!

Cook the beef in a pan until the juices run clear.  Then add the onion, chillies and almost an entire bottle of Enchilada Sauce.  Spoon the mixure evenly among the tortillas.  Add about 1/3 cup or so of cheese to the inside of each tortillas.  Roll ‘em up and place them seem side down.  Top with remaining sauce and your preferred amount of cheese.

In other news, one of my fave PB flavors is discontinued!

Mallard is out of town again so I am super busy with school, work and Snuffy ….and Christmas preparation!

    KitchenAid mixer for meatloaf? – Genius! I also don’t like touching raw meat and typically just avoid cooking meat because of that – even though I have an idea of what spices would be good for hamburgers and meatloaf… since I’m not the one eating them, I just pass on trying to make them… next time I’ll try the mixer for sure.

    I think I am the only blogger who has never tried ANY of the PB & Co flavors. Dark Choc dreams is on my list. Glad you stocked up on your fave. I bet sooo many ppl are gonnna be majorly bummed bout that one. You better hoard it before they all grab it. Kidding :)

    Nice! Good for you for cooking Mallard a nice home-cooked meal. And nothing says home-cooked like meatloaf! IT looks fantastic too, with the mashed potatoes, yummmm. I Was just thinking about how long it’s been since I’ve had meatloaf, way too long.

    I stock up on White Chocolate Wonderful whenever it’s discounted. It’s rare, but it happens!

    i love meatloaf! im not a big meat eater- but my mom makes a GREAT one.. its good to have once in a while! good idea with the mixer!

    First of all, I LOVE your Kitchenaid! :-) You are so sweet to make quality meals for Mallard after his trip. I like that you choose organic meat and eggs, too.
