I LOVE Challenges
I want to start this post by addressing the catastrophe that is weighing on all of our minds. If you are finacially able, please consider making a donation to lend a hand to people of Haiti. The most reliable donation center that I have found is the American Red Cross
Onto less horrific challenges… I am late in congratulating the ladies who ran the Disney Marathon! Monica and Megan both finished the whole marathon even though they were feeling extremely ill!! Running when feeling sick is hard but 26.2…now that’s challenging! As a new runner, I find so much inspiration in your determination. Caitlin, Meghan, Ashley and Deb also finished….did I miss anyone?

Yesterday’s Iron Pumping Workout
Front Raises: 3×10 with 10 #
Lateral Raise: 3×10 with 10#
Military/Overhead Press: 3×10 with 15 #
Skull Crushers: 3×10 with 10#
Chest Press: 3×10 with 15 #
It was a short workout but I do feel like I accomplished something
I am feeling it today.
From moves to meals….
If you read my blog often, you may notice that I don’t post a lot of my food. This is because a lot of what I eat are snacks or meals thrown together throughout my day between work and school and running after Ms. Snuffy.
Example: I arrive home desperate for a snack.
Vegetable +Protein+Carbs



…so I realize the Organic Ketchup doesn’t exactly count as carbs but maybe the baby carrots and breading on the Chick’n?? Work with me people!
Another favorite snack that I enjoy almost everyday. Yes, I tend to develop snack habits and then get burnt out on it and try something new.

I found this recipe on April’s blog for Low Carb Sweet Bread

Not that I am not a low-carb girl by any means, but I do like the high protein content.
I subbed Truvia for the Stevia because I had no Stevia. I subbed egg whites for the Liquid Egg Whites.
When Snuffy saw me get out the eggs, she decided she wanted an omelet…

I also subbed a Cream Of Tarter and Baking Soda mixture for the Baking Powder. That last substitution came from google.
While it was baking, I filled Snuffy’s Bunny Cup.

I mixed up some Stonyfield Vanilla and 1/2 cup of Pumpkin

and topped it with a slice of April’s Sweet Bread and a lil Cinnamon Raisin PB

Yay I’m so glad you liked the bread! Was it sweet enough with the truvia? I used pure stevia which is extremely sweet so I was wondering how others would stand up!
Snuffy has quite a cute omelet face. I wish those chik’n patties were vegan – I liked them more than real chicken patties before my vegan days!

I used to love swimming the hotel pools when I was a kid, how fun.
I just made my first batch of kale chips EVER last night. I am now addicted. I went through an entire bag of Kale in the last two days. Yikes! But I just can’t stop. I guess it could be much worse, like actual potato chips, right?!

Omelet Face ROCKS! Sometimes I think it is CRAZY that I jog on a treadmil to keep in shape because my lifestyle means that I consume more than I need…and then there is Haiti. And I am feeling not “good enough” because I didn’t lift this week? Hmmm…perspective.
