Applesauce Saves The Day!
I’m keeping my word and posting more often…because I love blogging! How ’bout a weekend recap? I got home from school way way way late on Friday. Snuffy was grumpy, hungry and refusing to eat. I was with her on the first two. My mood was lifted when I saw a package waiting for me! I couldn’t wait to get it open.
I’m telling you, this was exactly what I needed at that very moment

Holly even included a cute note that Snuffy insisted was for her…

Snuffy promptly ended her hunger strike once she saw the Banana Applesauce

Grumpy no more! My Pajama-fied Girl was now happy and so was I.

As I said in my last post, part of the reason for my sporadic posting is my addiction to all of your blogs! I have been entering all of your giveaways as well.
I have been wanting to try Jillian’s Shred FOREVER <—–insert kids voice from “The Sandlot”
So, I was practically jumping up and down when I found out that I won this on Stephanie’s Blog

As you know, I don’t have the strength and endurance that I once had. I did try the Powerade Zero yoga and pilates. They were okay. They were nice, easy workouts. I do like that they were short (2o minutes) and easy so that I could just use them in a pinch when I feel that I want to do something to get my body moving a little bit. Snuffy added resistance by climbing on my back during chatarunga so she slid down to my face during downward facing dog. She also prefers to sit on my abs when I do ab work.
I do plan to try Jillian’s Shred once I build up my endurance again. From what I’ve heard, it’s a pretty intense workout.
Maybe I will use this for inspiration

In the spirit of trying new things, I decided to give one of Mama Pea’s recipes a whirl. I have been having incredible cravings for fall flavors lately.
In fact, I’ve eaten pumpkin oats almost everyday!

…with Almond Butter, of course.
I saw Mama’s Vegan Pumpkin Bars and I knew that my stumbling onto her recipe was a sign that I need some Vegan Pumpkin Bars in my life
The recipe called for Organic Applesauce and my jar had gone bad in the fridge

Yucky. Yes, those reddish parts are mold… Applesauce fail.
But, wait… remember Holly’s package?

Applesauce On The Go saves the day again!

Since these bars are vegan and therefore contained no eggs, licking the bowl/spoon/beater was completely cool. Okay so I would have totally licked the beater anyway.
I thought Snuffy would want to participate but she was too busy tormenting Pedro

Do you bake for friends and family per request?
Mallard DID ask for some HealthyAutumn Baked Goods but once again he was unimpressed. He said the cream cheese frosting tasted wierd… Well, Sir, that’s because it’s made with Tofutti. I loved them. The bars themselves had a texture between Pumpkin Pie and Cake. I used Organic Powdered Sugar and Earth Balance for the frosting and I loved the way it turned out…

Seriously amazing.
While the oven was still warm, I tried a new way of creating Kale Chips. I turned the oven off and left the oven door cracked. This helps to make my kitchen warm and toasty! Snuffy was not in the kitchen at this point so I didn’t have to worry about her getting too close to the still warm oven door. Then, I tore the kale off of the stems as usual and placed it on baking sheets that I had sprayed with Olive Oil Spray. Then I sprayed some more OO Spray over them and sprinkled them with course Sea Salt. I left the pan in the oven for a couple of hours until the oven was cooled and Kale Chips were crispy.
Have you tried a new way of making a familiar food?

These were the best Kale Chips of my life!! They have a much better texture when they are made this way. I have never owned a dehydrator but I’m sure that they are even better made with one of those. I have eaten half of the batch (two bunches of kale!) already! Snuffy likes them too…possibly only because I eat them.

I haven’t made kale chips yet, I am always too eager to cook kale and enjoy it hot when I buy it. I need to try them though, they are a great sounding snack.

Baking for friends/fam per their request. Well, yes. But see I am the most food allergic/intolerant so everything is usually ok per my specs, so it’s gonna be ok for them. There is the taste issue, need it to be free of allergens AND taste good but over a decade, I have morphed my hubs into liking healthier stuff. I think your bars look AWESOME. The texture looks Amazing!!! I love things w/ that texture. And the frosting looks bangin!

yay for workout dvds! I collect them apparently! haha. I used to try and do some ab work while babysitting and the little babies always come and sit on me! It never works! lol

I usually bake for myself when I’m at school and then give them to my friends to enjoy. At home, I bake for my family. I usually have to coerce them into trying my treats but after that they are hooked!
I haven’t done a whole lot of baking lately, but when I do make vegan versions, my whole family tries to like it. Especially my dad. He’s so freaking cute.
I know that whatever my mom ate and wore, I wanted to eat and wear it too. If you keep the kale chips up, you’re going to have the healthiest child ever! I love it

I’m sure your bars were delish. I bake with modifications most of the time, but sometimes I do make things as they are supposed to be made. But usually my fam just has to deal with my healthified recipes!
Man, sounds like an exciting busy day! Lovin all those packages. I swear every time I get one it brightens my day.

Since I went vegan over the summer, I have been having A BLAST veganizing all of my old favorites! It’s soooo much easier than I ever imagined to sub almond milk for milk or cream, flax meal for eggs, etc!
